Hearth Cooking and the Joy of Cooking

I am very happy to report that the new edition of the Joy of Cooking is out! You can order it from Amazon.com: Joy of Cooking: 75th Anniversary Edition - 2006 New to this edition is a section on hearth cooking. Ethan Becker is a long-time enthusiast of the barbecue and campfire. When he saw my book he realized that hearth cooking is just an extension of the two cooking methods he knew so well. Ethan asked me to condense the technical section of my book, The Magic of Fire, to make it work in the new edition of the Joy of Cooking. I worked directly with with Susan and Ethan Becker. Susan is a brilliant editor. I think that with her help I wrote my best two-thousand woreds. The hearth cooking section begins on page 1059. It is the technical section of my book, The Magic of Fire, one hundred recipes for fireplace and campfire, condensed to the essentials. The Joy of Cooking now has the best introduction to hearth cooking of any book that I know of anywhere. Many of the receipes in the Joy now reference the hearth cooking section and so you can find an introduction to hearth cooking with recipes that you may already be familiar with. I am a great believer in looking to the past to find flavors and methods for the future. It is extraordinary — and courageous — for the Becker’s to have added hearth cooking to their American classic. Everyone who loves hearth cooking owes them thanks for so effectively promoting the American revival of the open hearth.
